Rainy Day Scavenger Hunt



It was a dark rainy day and as I enjoyed my morning cup of coffee I thought to myself, what am I going to do with my 4 year old inside all day?  She likes to look for things and play games so a Scavenger Hunt came to mind. I made up a list of things to search for and off we went.  She looked for items that fit into each category...sometimes multiple items.  Then a little while later I turned it into a Photo Scavenger Hunt.  She took my smartphone around the house and took pictures of the items she found for each category.
When she was finished, we worked together to put all of her photos into a booklet so that she could show her Daddy and Grandparents.
I tailored the categories to her level but you can always change it to meet your child’s needs. Finding things to do with your child that enable them to learn while they are playing is a bonus in my book!

Choices: What do they leave?



My daughter is a girly girl. She loves to put jewelry on and put clips, bows and headbands in her hair…even all at the same time!  She will put her hair ties around her wrist (all twenty of them at the same time) and some days Band Aids become a new accessory.
One night she left one of her hair ties around her wrist while she slept.  When she woke up the next morning it was obviously too tight and it left a huge purplish mark around her entire wrist.  I felt so bad that I did not catch it before she went into bed. It was tender to the touch.
This mark was visible for about a month and then started to slowly fade away.  It’s taken quite a while for it to completely go away.  In fact, it’s been three months and on one part of her wrist you can still see a slight mark left from the choice she made to wear it all night.  Now she didn’t know that was going to leave a mark, she just liked it around her wrist.
            When I think about this small event it reminds me of scars left from choices I have made or situations that occurred in my life.  At times when we make choices it might seem innocent, only to find out later it leaves a lasting impression or sometimes a “scar” that will not easily fade.  That’s the interesting thing sometimes about the effects of decisions we make.  At times they easily fade and other times it takes a long time and a small scar is left as a reminder.
            God is so forgiving and merciful!  He wipes away all our sin and bad choices when we ask for His forgiveness. Unfortunately there may be some scarring, but the amazing thing is that He can restore and deliver us from any guilt and give us freedom when we call on Him.

Patience


Well this is a lesson, a spiritual fruit, and a true test that I am continually learning and growing in each day.  At this time our family has been waiting patiently for the Lord to lead us to the right home. We thought we had found it several times, but for different reasons the Lord has closed doors. As my husband and I pray about this and ask God to lead us He has been speaking to us through our devotional readings, friends, family and do you know what He has been saying to us? BE PATIENT, WAIT ON ME, I WILL GUIDE YOU TO THE RIGHT APPOINTED TIME.

Yeah that is really what I want Him to say as we are approaching a year of living with my in laws and feeling like we are becoming a huge burden.  I so struggle with trying to figure it all out, make sense of it all and yet I find no logic, no sense. Just the fact that I know the Lord has a plan and that He is in control and I am not!
What has personally been a huge struggle is that during this time of waiting I have seen it affect me in ways that have been good and not so good. The good is that I find myself going to the Lord in prayer more than ever before, because I feel and have seen Him working.

To be perfectly honest I have always struggled with patience and having things right away. During this time my patience for most everything has been running thin. I have to stop and regroup several times a day and then there are days I fail miserably at having any patience at all.
Has anyone else felt that way or is it just me?

Even through this time, God continues to show up and He is faithful. Just to give you a few titles of my devotionals lately (seriously, you can’t make this stuff up!):

·      God’s Timing,
·      Walk away from worry
·      Are you tuned in?
·      Who you are meant to be (God’s plan)
·      My Way?
·      A Long and winding Path (Be still),
·      Stop and See (Stand Still and trust)
·      When the Journey Gets Tough
·      Not what I planned.
       
             I am not kidding.  
             All of these titles have come up recently as well as some more.
 But the Lord keeps yelling (just kidding, it’s always in His gentle voice) in my ear about this and He continually giving me verses and stories to help me through this time.  I am so thankful that He is patient with me and that He loves me that much. He still brings the verses, stories, family and friends with encouraging words, to be in front of me to help with the patience and the waiting. He is faithful.

I know someday soon I will be able to write about how HE has given us the Home, but until then I keep praying and learning about His timing and faithfulness.

So when you feel like you just can’t take it anymore (and I have plenty of those days) bring it to the Lord.

Santa Fe Chicken Packets: Summertime Perfection


I have made this twice now and I highly recommend this recipe. It is super easy and no mess. I did make a few adjustments see after the recipe.
Santa Fe Chicken Packets













Chicken breasts topped with black beans, corn and zesty tomatoes, cooked in foil packets on the grill for an easy summertime meal
Hands On: 10 | Total: 30 | Makes: 4 servings (1 packet each)
Ingredients:
    1 can (15 oz each) Rosarita® Premium Whole Black Beans, drained, rinsed
    2 cups frozen whole kernel corn
    1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, drained
    1/2 teaspoon ground cumin
    PAM® Original No-Stick Cooking Spray
    4 boneless skinless chicken breasts (5 oz each)
    1/2 cup shredded reduced fat Mexican cheese blend

Directions
1. Preheat outdoor grill to medium-high heat according to manufacturer's directions. Stir together beans, corn, drained tomatoes and cumin in medium bowl.
2. Place four 18x12-inch pieces of heavy foil on counter. Spray each with cooking spray. Place 1 breast in center on each piece of foil. Spoon 1/4th bean mixture over chicken for each packet. Bring up short sides of each foil packet and double fold top. Double fold both ends to seal each packet, leaving space for steam to gather.
3. Place packets on grate of covered grill. Grill 15 to 20 minutes or until chicken is no longer pink in centers (165°F). Carefully open packets; sprinkle 1/4th cheese on top of each breast. Close foil and let stand 2 minutes or until cheese melts.

Nutritional Information:
4 servings (1 packet each) Calories 386; Total Fat 9 g (Saturated Fat 3 g); Cholesterol 110 mg; Sodium 613 mg; Carbohydrate 28 g; (Dietary Fiber 6 g, Sugars 4 g); Protein 47 g; Percent Daily Values*: Vitamin A 11%; Vitamin C 9%; Calcium 26%; Iron 17%
* Percent Daily Values are based on a 2,000 calorie diet.

Cook's Tips
Packets may be baked on shallow pan in 425°F oven 20 minutes or until chicken is no longer pink in centers. Or, to save aluminum foil, place chicken in 13x9-inch baking dish sprayed with cooking spray. Spoon bean mixture over chicken; cover dish with aluminum foil. Bake in 375°F oven 30 minutes or until chicken is no longer pink in centers.

Adjustments:
  1. I seasoned my chicken with a little salt, pepper, garlic powder, paprika and minced onion. I put all four pieces in one Foil Packet.
  2. To make a little less spicy I just used Diced tomatoes( instead of with green chiles) I made both ways and they were great.
  3. Served with Spanish rice.
  4. Topped with Sour Cream.
